Pancit Bihon is stir-fried thin rice noodles — bihon — tossed with vegetables, meat and a savoury soy-based sauce until every strand is coated. It is Filipino merienda food: the mid-afternoon plate, the breakfast plate, and above all the birthday plate, because long noodles are eaten as a wish for long life.

A squeeze of calamansi or lemon over the top just before eating is not optional. It lifts the whole plate.
