What Is Lechon Kawali?

Lechon Kawali is pork belly given the roast-pig treatment in a pan instead of over a fire. The belly is simmered with aromatics until the meat is completely tender, dried, then dropped into hot oil so the skin puffs and shatters. It is cut into thick squares and served with a dipping sauce — usually vinegar with garlic and chili, or a sweet liver-based lechon sauce.
