What Is Sinigang?

Sinigang is the Filipino sour soup, and for many Filipinos it is the single most comforting thing you can put in a bowl. The broth is soured — traditionally with tamarind — then loaded with vegetables such as kangkong, radish, string beans, okra and tomato, and simmered with meat or seafood until everything has given something to the pot.

The point is the sourness. It should wake up your palate, cut through anything fried on the table, and make you reach for rice between every spoonful.
