What Is Crispy Pata?

Crispy Pata is the centrepiece of Filipino celebration cooking: a whole pork leg simmered until the meat is falling-apart tender, then deep-fried until the skin blisters into golden crackling. Cracking into it at the table is half the experience — the shatter of the skin, then the soft, juicy meat underneath.

It is traditionally served with a sawsawan of vinegar, soy, garlic and chili on the side, so every bite can be dipped and cut with acidity.
